Spicy Garlic Pasta

If you are a pasta lover like me, then you know that it's easy to whip up a good pasta dish in minutes. All you need is a lot of garlic, and al dente noodles.

I fell asleep this afternoon and when I woke up, I had an hour before we had to leave for my parents' house. I promised I would bring something for dinner, but I had no time to cook something else aside from pasta. I knew my dad loved garlic, and almost everyone else in my family loved spicy food. So I decided to make this simple yet delicious pasta dish that anyone can make in under 30 minutes! (Read On by clicking Read More -->)
Yield: 5-6 pax

INGREDIENTS:
1 whole half pack of spaghetti noodles (cooked al dente, ice bathed, and drained)
1 cup of pasta water (important)
2 whole heads of thinly sliced garlic
1/2 Tbsp of fine chili flakes (I used the native chili powder from Baguio)
1/4 cup Olive Oil

 As soon as the noodles are cooked but firm (al dente), save 1 cup of pasta water before pouring the pot to a strainer. Run cold water on the pasta and use your hands to "wash" the pasta to completely stop it from cooking. Drain well.

2. Use a saute pan with sides that are straight up instead of slanting ones like that of a wok's. These high-sided pans will aid in keeping the moisture in of your pasta.

Heat 1/4 cup of Olive Oil.

As soon as the first signs of white smoke are coming from the oil, add your garlic and saute continuously to avoid the garlic from burning.

Spread the garlic all around the bottom of the pan and let it brown for about 1 minute.

Sprinkle some parmesan cheese on the garlic (maybe about a Tbsp)

6. Add the pasta noodles and toss it to mix continuously until the noodles are coated with olive oil and garlic. Use 2 wooden spoons so that plastic spatulas won't melt into your pasta, and the handles won't get hot.

Add the pasta water as soon as the noodles are coated with the olive oil and garlic. Toss to mix again.

Add the chili powder to the pasta, and immediately toss the pasta.

9. Keep tossing until everything is well mixed. Don't leave your pasta in the pan than you need to. As soon as you've mixed it well, remove immediately from the heat so that the spices and the garlic won't burn.
