The best thing about salads is that you can completely change it every time you change your dressing. This time, I placed pomelo, feta cheese, peaches, and sliced boiled squid balls and crab sticks. I then topped it with sliced Almonds and shaved parmesan cheese.

Since the salad itself was full of yummy fresh flavors and not to mention, the Feta cheese has a slightly strong taste, I needed a dressing to neutralize the taste. INGREDIENTS:
  • 1 cup plain yogurt
  • 1/2 cucumber, peeled and finely chopped
  • 1 teaspoon fresh lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground white pepper

DIRECTIONS:
In a blender, combine the yogurt, cucumber, lemon juice, garlic, salt and pepper. Blend until smooth and refrigerate until chilled.
This dressing is best when it is served chilled.
