The best thing about salads is that you can completely change it every time you change your dressing. This time, I placed pomelo, feta cheese, peaches, and sliced boiled squid balls and crab sticks. I then topped it with sliced Almonds and shaved parmesan cheese.

Since the salad itself was full of yummy fresh flavors and not to mention, the Feta cheese has a slightly strong taste, I needed a dressing to neutralize the taste. Dressings are really easy to make so I didn't take photos of a step by step process on how to make it. Enjoy!

INGREDIENTS:
  • 1/4 cup olive oil
  • 1 cup seasoned rice vinegar
  • 1 (10 ounce) jar seedless raspberry jam
Directions
  1. Combine the olive oil, rice vinegar and raspberry jam in the container of a blender. Process until smooth. Taste your dressing and check if it still needs more sugar. I personally like my dressing to be on the sour side. Store in a jar in the refrigerator.

My salad (photographed above) consists of iceberg lettuce, slices of mango, walnut pieces, and shredded crab sticks. I topped it with fresh parmesan cheese shredded with a peeler.
